Fried Sole With Ponzu Sauce And Butter

There are over 40 different kinds of flatfish in Japan. Sole (flatfish) are flat (of course) and have both eyes on the upper side. They can be called Karei (カレイ・鰈) or Hirame (ヒラメ), and a delicious ingredient for Japanese recipes. Today, I would like to introduce a sole fish recipe with ponzu sauce(ポン酢) of grated radish and butter.

INGREDIENTS (FOR 2 SERVINGS)

2 slides sole fish (Flatfish)
Salt as needed
1 tablespoon Wheat flour
2 tablespoon Salad oil
20 Vegetable (Radish leaves or Spinach)
<For Ponzu sauce and butter>
150g Grated radish
2-3 tablespoon Ponzu sauce
20g Butter

INSTRUCTIONS


Preparation :
  • Wash flatfish and drain well.
  • Cut radish leaves (or spinach, this time I use spinach)

Step 1
  • Marinate flatfish with a little salt, and sprinkle flour thinly.
  • Pour salad oil in a frying pan and fry fish at medium heat.

  • When one side turns golden brown, turn over the other side.
  • Keep frying evenly then remove heat, serve a dish.
  • With the same frying pan, stir fry vegetable then put aside.

Step 3
  • To make ponzu sauce and butter, stir fry grated radish in the frying pan above at high heat.
  • Add ponzu sauce and butter. When butter melts, pour the sauce upon the fried fish and sprinkle stir-fried vegetable above.
